Courgetti with pesto and green beans. Drain really well, toss with the pesto and season well. Stir, coating the noodles, then add the tomatoes and toasted pine nuts to serve your courgetti. Feels good 🙂 Today's recipe for Crispy Green Beans with Pesto was inspired by my cravings for homemade pesto.
Melt butter in a large skillet over medium-low heat. Stir in garlic, pesto and salt. Toss butter mixture with beans in a bowl. You can have Courgetti with pesto and green beans using 7 ingredients and 6 steps. Here is how you achieve that.
Ingredients of Courgetti with pesto and green beans
- It's 2 of large courgettes spiralised.
- You need 4 tbsp of fresh pesto (see my other recipes for how to make).
- Prepare 1 pack of green beans.
- It's 1 handful of cherry tomatoes.
- Prepare 2 tbsp of pine nuts.
- It's of Parmesan cheese (or dairy free/vegan alternative).
- You need of Salt and pepper.
In a large pot of salted boiling water, boil pasta, potato, and green beans until pasta is al dente and potato and green beans are very tender. Using a spider, transfer beans to a colander, and set aside. Return water to a boil over medium-high. Bring a medium saucepan of water to a boil.
Courgetti with pesto and green beans step by step
- Spiralise the courgettes. (Or use ready made courgetti).
- Make the pesto. (Or use bought instead). Please see my other recipes for how to make..
- Put the green beans and courgetti into separate pans, add boiling water and cook for 2-5 mins. You could cook together if the pan is big enough..
- One cooked, drain both together in a colander..
- Return to the pan (not on the heat) and stir in the pesto..
- Dish up onto plates and add tomatoes, pine nuts, salt and pepper to season and sprinkle with Parmesan cheese. Enjoy!.
