Mutton pulao step by step
- For stock put water, mutton, ginger, garlic, saunf,whole coriander, zeera, cinnamon stick, black and green cardomons, cloves, salt, onions, star anise, black pepper in a pan..
- Cover and cook till mutton is tender (it will take approximately 1 hour)..
- Separate the chops and strain the stock and keep aside..
- For rice, in another pan put oil, fry onions till golden brown..
- Add in ginger/garlic paste along with green chillies paste and stir fry with tomatoes, salt & red chilli powder with 1/4 cup water. When softened add in mutton chops and stir fry for a minute..
- Now add stock (6 glasses) and when boil occurs add in rice and garam masala. Check its salt and cover and cook till stock evaporates..
- Put on dum for 15 minutes. Dish out & enjoy with raita..
