Semolina Pudding (Indian Halwa). Suji Halwa is very popular Indian Dessert which also known as Semolina pudding. This Indian Semolina Pudding is also called as Rava Kesari or Rava Sheera in some parts of the country. Often during Puja or a festive ritual, Suji Halwa is prepared along with Panchamrit in most of the Indian households.

Ingredients of Semolina Pudding (Indian Halwa)
- You need 1/2 kg of Semolina.
- It's 1/2 liter of milk.
- You need 3/4 kg of sugar.
- You need of raisins.
- Prepare of Coconut slices.
- It's 1 of Cardamom.
- It's 1/2 liter of vegetable oil.
- You need of peeled almond slices.
This simple delicious dessert has a fluffy & soft texture with delicate flavors of cardamom & ghee. Suji halwa is made in many regions of India with more or less the same ingredients & similar method. As said in my earlier post on Pineapple Halwa, halwa is a sweet which is typically made of grain-flour (Suji-semolina) typically, Ghee, and Sugar. There are many variations available to it.
Semolina Pudding (Indian Halwa) step by step
- Take a large mixing bowl. Add semolina and milk to it. Cover and set aside for half hour.
- In a large wok, add oil and bring it to heat. Take a cardamom, open it and add its seeds to the heating oil.
- Add sugar to the oil. Then add half a cup of water. Stir the oil continuously till the sugar gets dissolved and cooked in the oil. Keep the flame till a clear oil+water+sugar solution is observed..
- Now add the semolina+milk mixture to the oil. Stirr continuously. Keep the flame medium..
- Keep stirring and mixing till the mixture leaves oil. Also add your raisins and almond. remember - the key here is good mixing!!.
- When the pudding leaves oil, turn off the stove and dish it out. Add the garnish (coconut slices) and serve hot.
The most common halwa in every Indian household is the Rava or the Sooji (Semolina) halwa. It is generally made on all puja's and special occasion's.
