Ingredients of Shukto Recipe

  1. It's of bittergourd(2-3 inches length cut).
  2. You need of dried lentil dumplings or badies.
  3. It's of raw banana(sliced).
  4. Prepare of brinjal/eggplant(sliced).
  5. You need of raw papaya(sliced).
  6. It's of radish(sliced).
  7. It's of flat beans(sliced).
  8. Prepare of potatoes(sliced).
  9. Prepare of drumsticks(2-3 inches length cut).
  10. It's of bay leaf.
  11. You need of dry red chilli.
  12. Prepare of ghee/ clarified butter.
  13. Prepare of mustard oil.
  14. You need of ginger paste.
  15. You need of sugar.
  16. It's of Salt.
  17. Prepare of refined flour.
  18. It's of milk.
  19. Prepare of mustard seeds paste.
  20. You need of panch phoran/ five spices masala.

This traditional Shukto recipe is loved by the people of all age groups. Make a smooth paste of Poppyseed and Mustard Seed separately using a food processor or Shil Nora (Shil Batta). Strain the mixture to remove the husk. Shukto recipe- shukto is a popular veg dish of our bengali culinary.

Shukto Recipe step by step

  1. Panch phoran masala-dry roast the panch phoran or five spices & grind it to a fine powder..
  2. To begin with Sukto recipe,in a kadai heat mustard oil & fry the dried lentil dumplings or bodies until it turns light brown in colour..
  3. In the same oil fry the bitter gourd slices & keep aside..
  4. Then add the dry red chilli & bay leaf to the oil.Then add all the 2-3 inches length cut vegetables one by one..
  5. Cook for about 2 mints,add salt,sugar..
  6. Add ginger paste & stir well.Add the mustard seeds paste.Pour water. Cover & cook for 5 mints till the vegetables are well cooked..
  7. Then add the crispy bitter gourd slices & dry lentil dumplings/ badi.Let it cook about a minute..
  8. Now mix the flour with the milk & pour it into the vegetable gravy & mix well..
  9. Lastly add ghee & sprinkle the prepared ground bhaja panch phoran masala powder.Mix well & turn off the flame..
  10. Sukto is ready.Remove from gas & pour it into a serving plate..
  11. Serve the healthy Sukto with hot steamed rice..

Many vegetables are used for making shukto or sukto recipe but bitter gourd is most important among all ingredients. Basically shukto is a little bitter and sweet taste bengali mixed vegetable curry served with white rice and ghee at the beginning of a traditional bengali lunch. Shukto is a bitter and pungent stew of vegetables cooked in mustard oil and spiced with paanch phoron, ginger paste and chillies. It is a starter and usually served with rice.
