- You need of peanuts /moongphali.
- Prepare of chana dal / bengal gram roasted.
- You need of green chili chilies or dry red.
- Prepare of ginger /adrak.
- Prepare of sesame seeds.
- It's of curry leaves /kadi patta.
- Prepare of oil.
- You need of asafoetida of /hing.
- You need of salt.
- Prepare of water.
Add onion/shallots, garlic and saute well till onions turn light brown. Turn off the heat and cool completely. To make the peanut chutney, in a mixer grinder add the roasted peanuts along with the onion masala we prepared and some water. Scrape the sides in between and grind till it forms into a fine paste.

- Heat oil in a pan..
- Fry the peanuts on a low to medium flame for 3-4 minutes..
- Add the curry leaves and fry for a minute..
- Lastly add the roasted chana dal, sesame seeds & asafoetida and fry for 2-3 minutes more on a low flame..
- Take care that you don't over brown or burn this mixture, else the chutney might have bitter tones..
- Let this mixture warm or cool down..
- Add in a chutney grinder or a small blender..
- Add in the ginger, green chilies and salt..
- Pour some water and grind the peanut chutney to a smooth consistency..
- You can make the peanut chutney thick or of medium consistency..
- Check the salt and add more if required..
- Serve peanut chutney with idli, dosa, medu vada, uttapam or pakoras..
Add water in between whenever needed. Method: Heat oil in a pan add garlic, roasted peanuts, red chilly powder, tamarind juice, salt, mix this all together, switch off the flame, put it into the blender and make a paste.
