Odia Style Pointed Gourd Curry The May month came to an end and as you all know I am belonging to a monthly posting food group named as 'Shhhhh Cooking Secretly Challenge'. This month the challenge was from 'Odia Cuisine' and my partner was Narmadha. This aloo potol (pointed gourd and potatoes curry) is a quick and easy, one pot meal. Ingredients of Aloo potol rasa (Odia style potato pointed gourd curry)
- You need of pointed guards.
- You need of boiled potatoes(medium sized).
- You need of medium sized tomato.
- You need of chopped onion.
- It's of bay leaves.
- Prepare of turmeric powder.
- It's of chilli powder.
- It's of Salt.
- It's of sugar.
- It's of red chillies.
- Prepare of dhaniya powder.
- Prepare of meat masala powder (optional).
- Prepare of White paste.
- Prepare of mustard oil.
- Prepare of ghee.
- It's of Chopped coriander leaves.
- It's of masala paste:.
- Prepare of onion.
- Prepare of garlic.
- It's of ginger.
- You need of cinnamon.
- Prepare of cumin seeds.
- It's of red chillies.
- You need of water.
- It's of white paste:.
- Prepare of cashew nuts.
- Prepare of grated coconut.

Peel the potatoes and cut into pieces Make a fine paste of shredded coconut, ginger, poppy seeds (khus khus), cashew nuts, dry chilly and cumin seeds. Heat oil in a deep pan. Fry the parwal and potatoes till golden brown. Aloo Potoler Dalna (Potato and pointed gourd curry) This humble vegetable called potol in Bengali, parwal in Hindi and pointed gourd in English can be prepared in many interesting ways and aloo potoler dalna is one such delicacy from the Bengali cuisine.
Aloo potol rasa (Odia style potato pointed gourd curry) step by step
- Prepare the masala paste..
- Prepare the white paste..
- Cut the pointed guards and potatoes..
- Heat a pan and add 4 tsp oil in it and then put the pointed gourds in it..
- Then add half of the salt, turmeric powder and chilli powder in it and saute it till golden brown by covering the lid..
- Then remove them from the pan and add the potatoes in it and also saute it well for coating of the masala..
- Keep both of them aside..
- Then in the same pan put oil in it and then add sugar. When it becomes caramelize then add the red chilli and bay leaves in it..
- Then add the chopped onion in it and saute it well till it becomes golden brown in colour..
- Then add the masala paste in it..
- Add the remaining powder spices in it..
- Then add the chopped tomato in it along with the salt..
- Cook it well by adding a little water till the tomatoes get slender..
- Then add the white paste in it. Mix it well and add the fried pointed gourds in it..
- Mix it well and add the fried potatoes in it..
- Mix it well and cook it for 4-5 minutes in low flame and then add water in it..
- Let it boil for 3-4 minutes and add the chopped coriander leaves in it..
- Mix it well and switch off the flame and add ghee in it..
- Now your aloo potal rasa is ready and serve hot with roti, poori, paratha or rice..
Potala as you all know is the Odia name for Parwal or Pointed Gourd and Rasa means gravy. In this recipe, Parwal is cooked with coconut, poppy seed and cashew nut gravy and all spices to give the dish a rich feel. This curry is mainly made during religious festivals when the uses of onion and garlic food is prohibited. When the onion turns golden, add the onion + garlic paste, cumin seeds powder, coriander powder, turmeric powder, and salt; and saute the mixture well. Then put the coconut milk to it and boil the mixture.
